What makes Uptown Bakers products so special?
Uptown Bakers upholds a tradition that began with bakers many centuries ago: working with prefermentation of bread dough to enable the dough to rise and develop into a wide variety of flavors.
From the discovery of sourdough some 3,000 years go, to the more sophisticated yeasted preferments, this important process is what sets Uptown Bakers apart from other wholesale bakers. By using different preferments, Uptown Bakers has mastered the art and science of baking, enabling each bread type to develop its own unique flavor profile.
In fact, five different preferments are used to make Uptown Bakers breads: three natural starters are refreshed and maintained everyday in the purest tradition as well as two yeasted preferments: sponge and poolish.
"Our traditional white sourdough is developed to provide a mild and pleasant acidity to our sourdough bread, the rye levain naturally generates a touch of spiciness to the rye breads while the wheat levain provides nice honey flavors to the whole wheat loaves. The nutty flavor in our baguettes is obtained with the use of poolish in the final dough while the sponge brings a blend of complex aromas to our sweet breads." -
